Balmaadi Estate occupies the upper slopes of the Nilgiri hills in Tamil Nadu, where altitude and persistent cloud cover produce conditions more akin to East Africa than the lowland estates of southern India. Ramesh Kannappan manages the estate with a focus on selective hand-picking, a time-consuming practice that, at these elevations, is the difference between undifferentiated parchment and a traceable specialty lot. The estate's peaberry (sorted from the main harvest as seeds that formed singly inside the cherry) concentrates the flavour of the full bean into a denser form.
