Origin
India
India is the world's sixth-largest coffee producer, and one of its most underrated. Unlike the monoculture plantations of East Africa or Central America, the majority of Indian coffee is grown under a canopy of native shade trees — a multi-strata agroforestry model that maintains biodiversity, sequesters carbon, and produces beans with a distinct terroir. The country grows almost exclusively Arabica in its high-altitude Western and Eastern Ghats, and a significant volume of Robusta on lower slopes. Monsoon Malabar — a uniquely Indian process where dried beans are exposed to monsoon winds — remains one of the world's most distinctive cup profiles. A new generation of post-harvest scientists and estate owners is now applying precision fermentation and traceability to Indian lots, challenging long-held assumptions about the quality ceiling of Indian specialty coffee.
